Billy Sims BBQ is Tulsa-based fast casual concept serving premium BBQ smoked daily in-house with traditional sides. Founded by 1978 Heisman Trophy winner Billy Sims, and cofounder Jeff Jackson, Billy Sims BBQ is a unique franchise concept that is one of the top rated celebrity and athlete-owned restaurants.
To promote the limited-time “All You Can Eat Rib Night” on Tuesdays, I had the pleasure of interviewing Billy Sims himself at the Norman location.
For first time visitors, Billy Sims recommended The Heisman Sandwich because “it’s something most people can’t forget.” It’s a three meat sandwich with a choice of chopped brisket or pulled pork, piled high, with slice of bologna and hot link. His second favorite, The Triple 20, features pulled pork drizzled with Billy’s Secret Sauce and topped with cole slaw and provolone cheese.
The All You Can Eat Rib Night promotion is in line with their decade-long tradition of big flavors, big appetites and big value for the dollar, said Jeff Jackson, president of Billy Sims BBQ. While there are many ways to eat ribs, Sims just goes with it.
“My technique for eating ribs is get real messy,” said Sims with a laugh. “Put me with a bib on and just go with it.”
With over 40 locations across six states, the Norman store is special to Sims as he played college football at the University of Oklahoma. While I was preparing for the interview, Sims met with fans and posed for several pictures.
“I always run into a lot of fans in the Norman area,” said Sims.
“If you haven’t tired Billy Sims, give us a chance and come by,” Sims said. “I think you’ll be pleased with the food.”
