Coming from a family of restaurant owners, Candace and Blane Gideo are the owners the Italian Food Truck, 2 Brothers Bistro. In this Food Truck interview, Candace shares how the origin story, popular selections, and where to regularly find them.
What got you started on 2 Brothers Bistro?
After closing our last brick and mortar 2 brothers pizza, we chose to go mobile.
What can people regularly expect from you?
Excellent service with great food consistently.
Let’s talk about he design of the truck. What made you go with your truck?
We chose a trailer for a number of reasons. The inside is built for what we wanted to serve. Mostly baked or grilled foods. We chose not to have a fryer, again for a number of reasons.
What’s a typical day like?
Preparing food, loading and unloading the trailer and making lots of people happy!
What are your most popular options?
Our Italian Meatball sub, Grilled chicken parmesan sub, Italian Cheese Panini and our Baked Penne pasta.
What are some of your usual spots and where can people go to learn more about your truck and where you’ll be located?
Heard on Herd, H&8th, Hobby Lobby Corp office and Food Truck Friday’s located in Downtown OKC by the Civic Center to name a few.
We post on the food truck app Truck It OKC when we are at a public venue. There are also a few new food truck spots coming this summer you can find us.
Anything else you want people to know?
We formed the Oklahoma Independent Food Truck Association or (OIFTA) with Lalo Hernandez owner of Lalos’s I love My Taco Chop food truck, which now has close to 40 members.
We also have the first independently owned, operated and state licensed Beer Truck called Red River Beer co. It is available for public and private events.
My husband is the former owner of 2 Brothers Pizza in Arcadia for 14 years. I am the former owner of Papa’s Lil Italy that was on I-35 from 1993-2003. I am happy to be back serving great food.
I come from a family of restaurant owners. My brother owns Papa Dios, which is the longest family owned and operated Italian restaurant in OKC.
