Bringing Authentic Belgian Waffles from their home in Belgium, Stillwaffles serves up waffles without the need for a knife and fork. I got to try these delicious waffles during the last H&8th Night Market so I knew had to reach out to them. Owner, Kathleen Oliviers, talks more about the sweet food truck.

What got you started on Stillwaffles?
The company my husband worked for in Belgium (Asco Industries) offered him the opportunity to be a part of the start-up of a new facility in Stillwater, OK. In September 2013 my husband and I moved to the US. While applying for my work permit, which is a process of three months, the idea grew to start our own business. We wanted to introduce the Oklahomans to our culinary culture, so we decided to start a food truck serving Authentic Belgian Waffles.

What can people regularly expect from Stillwaffles?

There are no forks or knives needed to enjoy one of life’s greatest indulgences: caramelized sugar glistening on the most delicious buttery-sweet treasure beneath.

What is used to make your waffles?
The waffles are freshly prepared on an original Belgian waffle iron with pearl sugar imported from our hometown Tienen, some 30 miles east of Brussels.

Let’s talk about he design of the truck. What made you go with your truck?
We were looking for something that reflected tradition and what better than to go back to medieval times and get one of our royal lions on a seal. The Belgian royal coat of arms inspired the lion in our seal. You can find the tree colors of the Belgian flag back in our logo (red, yellow and black).

What are your most popular options?

In Belgium we name our waffles after their city of origin. We have two types of waffles, the Brussels waffle and the Liege waffle. The Brussels waffle is more similar to the ‘Belgian waffle’ the US knows. The batter creates an airy, crispy waffle. Our Stillwaffle is more similar to the Liege waffle. It’s made of a dough instead of a batter and we add pearl sugar to it.
